It's sugar, and one of several photos of him in both white and brown sugar. Other stars were photographed in other items as well. Thom York in chocolate and Michael Stipe in milk (wheat on Alanis Morissette and corn on Antonio Banderas). The photos were for charity (Oxfam). I can post the other photos if anyone is interested let me know!
