Umm, there is absolutely no reason why not. Why on earth should a U2 opening band be a bland rock band? Simply because a % of the audience will be narrow minded and dull? Personally I love it when the opening acts ARE completely different to the main act. Two completely different flavours.
Why on earth can't you mix different styles together? Do you only enjoy one style of music?

As to why U2 have chosen Kanye West, Kanye discussed it somewhere. He said that U2 and he made a connection at a recent awards show. (I forget which one.) He said that they each expressed mutual respect and admiration for each other's music.
Something that apparently many U2 fans wouldn't know how to do.
