i love roasted red, yellow and orange peppers as antipasti too, Italian style... i halve them and char over a flame or under the grill, then put them in a pyrex dish, covered with film to steam until they are cool enough to handle, then i peel off the skins, cut into quarters and make a dressing out of olive oil and balsamic vinegar, crushed garlic, lemon juice, lots of black pepper and a pinch of salt and serve with warm crusty bread...
i like to slice and char-grill aubergines and serve that way too, but with lots of fresh roughly chopped mint thrown into the dressing as well...
i grow peppers and aubergines in the garden most summers, it's so nice to just pick and prepare them the same day...
