Ax, following on from twitter, what's a good example of a "proper" Melbourne-style chicken parma - or what makes it Melbourne-style?

A proper parma should be chicken schnitzel covered in a tomato-based sauce, ham, and cheese, served with sides of chips and salad.

I get fucking confused when I go elsewhere and places serve it with fucking roast or mashed potato or I hear in some places even pasta. Plus it just really never seems to be quite as good outside Victoria.

(Melbourne really does have a cult of the parma, there are multiple popular Melbourne-based websites that rank pub and restaurant parmas.)
