I haven't seen a whole lot of these, but Pink Floyd's Live at Pompeii probably tops my list. Awesome songs and environment, topped with great interviews and behind-the-scenes stuff.

Seriously if we're talking about U2, Rattle & Hum and the One documentary on the 90s dvd were far more interesting to me than U23D. Also, Popmart Sarajevo.
