Which of the B-sides were played live so far?

Yeah, Bono wrapped lines of "Two Shots" around "Stay" in an Elevation show or two.

Early B-sides like "Boy-Girl," "Touch," and "Things To Make and Do" were played live.

"Holy Joe" was played in the NYC Village K-Mart to kick off PopMart.

I think they played "Christmas (Baby, Please Come Home)" at the last Joshua Tree Tour show in Tempe.

"Sweetest Thing" was somewhat frequent on the first leg of the Elevation Tour.

"Silver and Gold" was played during the Joshua Tree Tour.
