I can dance to any U2 song when I am drunk, but I guess the more technoey ones are the best to dance too, thats if you dont want to look like an idiot, faves would include

i cant believe no one has suggested the steel remix version of 'Night & Day. Even tho u2 didnt write it, they made it thier own in a most magnificent way. And by far the greatest cover u2 has done. how could i NOT dance to it. Amazing, inspiring,emotional,soulful, leaving me breathless every time.
