The source is a recording of the 4-25-87 San Francisco soundcheck. U2 were screwing around and this song came out. They also did another song called Moving Out. But it is not a studio outtake from the Joshua Tree.

There is also another similiar song that was recorded with Daniel Lanois in 1990 prior to U2 going into the studio for Achtung Baby. It is a rough demo done at someones beach house. But again it is not a Joshua Tree outtake.

Well there's a videotape of Rattle and Hum outtakes.. is that what you mean?
 
The song you are referring to is "She's gonna Blow your House Down". I have the acoustic version and the one from the Outtakes. Surprisingly, Bono substitutes the chorus with "Wake Up Dead Man" in one of the takes.
