Question For Audiophiles

The answer to this is probably very obvious, and I think I may even already know, but I need the proper terminology and such. In ITunes, I listened to Stay(Faraway, So Close) from Zooropa, and then immediatly after I listened to the same song from the Best of 1990-2000. Both were ripped directly from my CDs. The latter version had fresher, higher sound quality to it. Why? I seem to notice that all of their records post-1995 are of a higher sound quality than those pre-1995. Why?
 
That's why I like it when an artist's output is remastered and reissued. Not only is the sound quality vastly superior, but the volume is the same on all the albums.

Listening to The Police and Peter Gabriel, for example, has never sounded better, and one can make an excellent compilation without worrying about the volume going up or down anymore.
