Here's mine...

1. Peter Walsh (Scott Walker, Simple Minds)

Adrian Belew (himself and TONS of others)
Peter Collins (Rush)
Brendan O'Brien (Boss, STP)
Trey Spruance (Mr. Bungle, Secret Chiefs 3)
Terry Brown (Rush)
Prince (himself)
Eddie Kramer (Hendrix)
Andy Wallace (Nirvana, Faith No More)
 
Brian Eno, Flood and The Edge all working on the same album.

As far as others who haven't worked with U2 before;
Belew would be cool, but quite a clash of styles.
Maybe Steven Wilson of Porcupine Tree.
Perhaps Paul Draper and Dominic Chad of Mansun (can't recall if they produced their own stuff or not, but I love their songwriting).

I really can't think of anybody off-hand that I like better than Eno, though.
 
A full album by Rubin I think would be a glorious, melodic, stripped down, energetic affair. But alas, looks like we're never gonna get that.

Would be interesting to hear what Geoff Emerick (Beatles) or Nigel Godrich (Travis) would do with them.

Todd Rundgren.

As a guitar player he could truly put the Edge on fire. As a lyricist he could help Bono out and trust me help is needed. The drums and bass on Rundgren produced album always are beautiful and alive. Todd is God and best producer for the band.

That would be awesome actually.
A friend lent me some stuff produced by Rundgren a few years back and I was blown away at how great a CD could sound. He really does great work.
