I'm just posting this quickly so I'll have more later, but off the top of my head, one of my favorite's would be the fourth and final night in Boston on the Elevation tour (June 9th, 2001).

Pride
Until The End of the World
The Fly
Even Better Than The Real Thing
Mysterious Ways
Kite
Gone
New York
Out of Control
Party Girl

all in the same setlist. That was awesome and it's a great bootleg.
 
This show is pretty great. Too bad the bootleg is mediocre.

U2 Chicago, 2005-09-20, United Center, Vertigo Tour - U2 on tour

The Ocean
Acoustic Walk On
A relatively substantial Ol' Man River snippet, if I remember correctly
Discothèque
The Fly with a Daddy's Gonna Pay snippet
The First Time
Bad with a "40" snippet
And the normal Vertigo stuff.

Oh yes I have that bootleg too. I love Bono's little Old Man River snippet. It's so gorgeous! The parts of the set you mentioned were the real highlights, especially that Discotheque performance. The rest was alright. The First Time with Edge on acoustic was awesome! Great setlist, wish I could've been there. The sound quality isn't too bad but I would not mind if it were a bit better.

Was an awesome set list and one of the best bootlegs I've heard.

My aunt was at this show, unbelievable energy and of the 32 she's seen since TUF tour, it's in her top 5!
