How 'bout: onions & garlic sauteed in butter, then added to cooked rice seasoned w/salt, pepper & a touch of lemon?
OR
lentils cooked in chicken broth with roasted garlic & onions?
OR
slowly roast elephant garlic cloves in the oven until tender, then simply spread on your favorite cracker? - YUM!

As for the kale, I've never cooked with it so I can't be much help to you there!

poor girl!! onions are great. so...no onion rings, no awesome blossom, no fajitas (they taste better with the onions and peppers)...?! oh my...
