I got all excited when Bono snippeted a bit of Van Morrison's Crazy Love during a show or two of Elevation. They've never been known to play other peoples songs very well, but maybe they could handle Tupelo Honey.

Synchronicity 2 by The Police. Imagine the what Edge could sonic to the song. I've always that Bono would sound great singing a Police song.
Remember when he sang part of Invisible Sun?
Every element of this song would be equal or better if done by U2.

Dead serious about this, I have a strange obsession with this song, and it would just floor me to hear Bono singing it. They could rock it up like Goldfinger did when they covered it. Plus it's sort of a political song, so it's right up his alley.

I agree with Synchronicity II, that would rock.
I don't think they'd do Corduroy justice, it is my favorite PJ song and I don't think anyone else could do it better.
My picks would be Whole Lotta Love by Led Zeppelin and Run Like Hell by Pink Floyd

I would prefer they do their own new songs in recording or play their own material live, but if I had to pick a song. "We Can Work It Out" by The Beatles. Edge and Bono harmonizing to the "Life is very short" chorus.

If they are going to do a Beatles song they should do "Come Together."

I'm really surprised they haven't already.
