Not a fan of rock instrumentals.

Quadrophenia and The Rock by The Who are pretty cool though.

Jazz, classical and electronica is where it's at for cool instrumentals, but I'm assuming you mean rock instrumentals, which means...

Excellent choices! I would add Marooned by Pink Floyd, and Sweet July by Richard Wright, the latter off of his little known but brilliant album Broken China.
