set the ipod so you manually manage the songs/playlists. you can choose check boxes of the playlists you want and don't select the others. only the selected playlists will be put on your ipod

each ipod's prefrencees should be diferent so yours should always be the same and vise-versa. you need to connect then do the preferences for each
