Off of the top of my head, i'm thinking they were:

Walk On
Bad
Until The End of the World
Kite
Even Better Than The Real Thing
Desire
Angel of Harlem
Stuck In A Moment
New York

(please, add if i've missed one)

I'm missing the absence of New York (which I guess has been replaced with COBL)

Definitely "Kite" and actually "New York" with the
white sheets flowing around the heart and even more impactive seeing after 9/11! They are very missed by me on present tour.

Actually UTEOTW is not gone. They've done it a few times on Vertigo '05. But not a staple on the setlist.

11 O'Clock Tick Tock and Until The End Of The World.

Should both be played at every show.

I wish they could find a way to fit "Walk On" in. "Kite" too, but I think there's no chance of that since SYCMIOYO has the dad angle covered.

Stuck In A Moment. I love that song and I wanted to listen to this new version with a piano so much.

funny they performed it during the Tour's opening night rehearsal and it hasn't appeared once.

Kite
Kite
Kite
Stuck in a moment you can't get out of
Stay (Faraway, So Close!) (agree with neutral that it can be hard to fit in...)
Gone
Walk On
Sweetest thing (can't call it a regular, but was great with Bono at the piano etc)
New York
