Personally I'd choose Chapel Hill over Madison, but that's mostly on account of the milder weather, which wouldn't be a concern for everyone. The Madison metro area is much smaller and less built-up, which is nice, whereas you can't get much of anywhere in the Triangle area without highway driving. Both are close to lots of beautiful natural areas, both have lots of only-in-a-college-town cultural attractions. Chapel Hill is very much part of the 'New South' demographically, so there wouldn't be as much culture shock as other places in NC.

They're both college towns, so they're both probably pretty damn fun. I've spent a couple lost weekends up on the U of W campus in Madison. It was wild, from what I remember. Personally, I'd probably pick Chapel Hill if I had to choose between the two. Nicer weather, and I've heard a lot of good stuff about this thing called Southern hospitality.
