First barbeque of the season: Grilled scallops, salmon, corn. (and a strawberry margarita, of course!)

grillscallops5-2011.jpg

:reject: the pictures never make it look as good as it really is.

I'm so glad I finally got "into" scallops.

Costco has big beautiful scallops the size of your palm for a great price. I haven't tried them on the grill. I've used a grill pan on the range in my kitchen.

Also, speaking of corn, has anyone tried deep-frying corn on the cob?
It sounds ridiculous, but it is ingenious. You tie string around the skin of the corn to keep it on. The hot oil never enters the corn because the moisture from the corn is boiling and escaping out, cooking it.

We used to have backyard fry parties, and the goal was to get as inventive as possible with the oil rather than just frying a turkey. It's kind of a waste if you only fry the bird and not some sides and dessert.

mmmm that looks lovely BC! i spy some baby beetroot leaves - yummy!

I love salad with lots of different yummy leaves. I've also pretty much decided I only like cherry tomatoes these days too. They are just so much tastier than the big ones. And there are so many different types and varieties to choose from.

I had the best pizza in Winnipeg! Anyone ever been to Boston Pizza? I had one with ham and then went back and had a Szechwan pizza the next day. So good!

We ate there several times when I was in Vancouver. Everything I had was quite good.
(Well, the wine was okay if I remember, but...)

Yes, we have one here in Thunder Bay! It is very good!

I had trouble finding a decent cup of coffee on my trip. Do people in the north like it weak? It was the same in South Dakota. I gave up and stopped drinking it until I got home.

That food looks so delicious!!

Boston Pizza is kinda meh. :reject: There are SO many better options out there. Then again I've never had pizza there, as I'm lactose intolerant, so maybe it's just the other non-pizza stuff that isn't as good.

I was in Seattle this weekend, so on my way home I stocked up on all my favourite goodies at Trader Joe's.  Hot damn. They only had one of the type of naan I like, so I snapped it up. I wish there had been more. Tonight for dinner I had that dipped in their hummus and also made a salad. Perfection!!

Speaking of hummus... Has anyone ever had Fava Bean hummus, sometimes called Egyptian Hummus? OMG!:drool::drool:
They use Fava Beans instead of chickpeas. It's got a more smokey, woodsy flavor than regular hummus.

I love all types of hummus, so I was curious when I read that MN Twin Joe Mauer likes turkey wraps with Edamame Hummus. :hmm: It sounds pretty good.

I've got to get the food processor out and get to work.

just a little something I whipped up yesterday afternoon for a dinner party last night...

chicken caesar salad with homemade dressing, orange sesame wild rice, fruit, garlic bread (not in photo) and a lime cheesecake. Plus we had pink lemonade and white wine. Perfect light meal on a very hot summer night.

^Yummy!

I finally went to the Kona Grill last night.

The fish and such were great, but they had Salted Caramel Creme Brulee for dessert!:drool::drool:

I should have taken a picture, but we jumped into it as soon as it hit the table.

my shop has been super busy with weddings and graduations the past few weeks so I've been working 55+ hours a week :crack: I am one tired girl. I totally earned this one (along with a huge frosty beer last night).....

 Caramel Cooler (with NO whip :barf: ) from Caribou

I brought home some stuff from work for my dad's birthday....Cookies and Cream, Coconut, White Choc Raspberry, and Smores.

super easy...make a cheesecake crust with graham crackers, sugar, and butter. Put a tablespoon on the bottom of each cupcake paper and use the spoon to press it down so it's even. Any chocolate cake batter from scratch or a box mix. Then after it's done the top is just marshmallow cream that's torched with hershey bar on top. I've worked at other places that instead of the crumbs on the bottom of the cupcake it's just broken up graham crackers on top of the marshmallow with a chocolate drizzle or choc pieces instead of a hershey bar. Or it's house made marshmallow or Italian meringue instead of store bought cream.

Made dessert for a friend's stagette last night. Vanilla bean and sour cream panna cotta with raspberries in champagne gelee and topped with fresh lime whipped cream:

Step 1 - champange gelee:

I know that technically panna cotta is supposed to come out of the mould and stand on its own, but I decided to leave it in the cups for easier and neater transport.

I brought almost twice as many as we needed, but they were all devoured. I think this one is a keeper. :)

those look amazing kafrun! i think panna cotta is fine in glasses - i've had it that way a couple of times in restaurants (with a really intense dark chocolate ganache )

Orange sesame wild rice recipe please
kafrun the panna cotta with raspberries looks very devourable!

Wild Rice

zest of one orange

green onions

blueberries

toasted almond pieces

mandarin oranges

and then this is the hard part because I use a toasted asian sesame dressing that I get a local gourmet grocery store. They have their own brand so I don't know what you could use in place of it but if you can find something sesame that would probably work. It's a think dressing with a lot of flavor unlike the Kraft asian dressing, which I find completely nasty anyways.

Everything is just to taste. I don't measure out anything so it's all your preference as to how much onion, blueberries, etc you'd want in it. I personally think 1 orange makes it too orangy but I was told to leave it as is by everyone that's had it.
