I made these today :angry: I have nightmares about cake balls :| I made about 90 today but that won't be enough for the Sat afternoon crowd so I'll have to make tons more tomorrow. :happy: I can't really complain too much because it adds lots of extra hours to my paycheck but I still can't stand making them!

Coconut (coconut cake inside too), Red Velvet, Chocolate, and Cookie Dough (vanilla cake and buttercream with choc chips.)

wow! those look amazing! how do you get them so round?? are they baked that way in special moulds?? (i am a baking freak! :D)
 
I work for a specialty cake shop so we have tons of batter daily that we can't use as it's made fresh each day. There has to be extra batter each day just in case we get a last minute order. So we just take our excess cake batters and bake cakes with them. The cakes chill overnight and then are mixed with a little buttercream. It then looks like raw cookie dough but it's really baked cake with frosting. Then, take a cookie scoop and scoop them out and then round them with your hand. Freeze them for a bit and then dip them in coating chocolate. I use candy dipping tools to dip them in the chocolate just like a truffle. Coating chocolate is different to use than tempered chocolate so you have to move quickly or it sets up on you really fast.

i've got a great recipe for red velvet cake in my Hummingbird Bakery Cookbook, and they have some nice frosting/buttercream recipes too, so will definitely experiment hehe

go light on the buttercream. It's just to hold the cake together once it's in ball form so it's probably 3/4 cake to 1/4 buttercream.

Thai iced coffee and Thai iced tea:

Thai iced tea is my favorite drink EVER. My roommate and I started going to these two Thai restaurants that were on the same street and drinking this stuff a lot last year. If you've never had Thai iced tea, go find some NOW. Like, right now! :drool: The coffee isn't bad, either, but the tea is like orange crack.

The food was good, too, at those places. I usually got General Tso's chicken, Pad Thai, Yakisoba, or Thai spicy basil chicken. Man, I loved college. I have since started making Pad Thai at home and a sort of knockoff Thai tea that's probably more like Chai tea, but it's still good even if it's not the same.
 
what's that tea crap with the giant tapiocas in it? that stuff scares me.
 
i've only had bubble tea once, sadly i don't remember how it tasted.

one of these days i'd like to make a cake that tastes good. i follow the recipes exactly, using the appropriate flour, adding ingredients in the right order, etc. it's always dense and dry. yuck.
 
I love bubble tea simply because it's so weird. I don't even like tapioca pudding - I always thought that was disgusting.

But something about drinking this nice shake-like fruity drink, and then zzzzzzap! up comes a little alien squishy thing up through the straw.

It's like a mystery squishy ball party in my mou .............. oh .... maybe I shouldn't go there.

I had that when I was in Edmonton.

Didn't taste bad, but the thought of frog eggs was enough to not let me finish it.
 
Yeah, bubble tea is not my favorite. When I'm drinking something, I'd rather not have bizarre objects coming up the straw unexpectedly.
 
i just don't like the idea of solids in my beverages. beverages are, by nature, liquids. i'm not even a fan of adding ice (as far as iced tea goes, i pretty much only like the soft drink immitation nestea lipton stuff that comes in bottles, mainly because it only bears an over-sweetened vague resemblance to actual iced tea and may as well be called some kind of non-carbonated soda-beverage all on its own. i don't drink iced coffee. ever.).


i'm also picky about crunchy toppings on ice cream. if you're chewing a bowl of ice cream, you're doing it wrong.

The black tapioca balls ("pearls") they put in bubble tea have the look and texture of frog eggs. They're like chewy Jello. :yuck: And they serve bubble tea with an extra large straw so you can suck up the pearls with it.

Same here. Ice cream is too cold to chew!

I don't even like mushy fruit in my ice cream that much. When I make my own, I cook the fruit on the stove and then pulverize it in the blender until it's just syrup.

It looks like they have a newer model out now, though. I got mine last summer and haven't bought any ice cream since.

I know. I had bubble tea every day when I lived in China and loved it. Not once did frog eggs ever enter my mind. Not once. :shrug:

True true, BUT if you let the ice cream dissolve in your mouth and then eat the crunchy toppings it's all good!

In fact, way back when, when Snickers Cruncher still existed, they had an ice cream variant. Best grocery store-bought ice cream I've ever had.
 
I bought a vintage blender last week from the thrift store; very heavy, all glass and metal, and I've been going milkshake crazy this week.

Tonight I made one with all-natural vanilla ice cream, some shredded coconut, and half a slice of red velvet cake I had left over.
