I love salmon. If I lived someplace where salmon were cheaper and more plentiful, I'd eat them all the time.

Haven't been cooking at all lately, which has been depressing me. Which is why doing something as simple today as making a lemon-pepper, basil chicken with lime juice on top on the George Foreman has made me feel great. Plus it was delicious.

Tonight I made a ricotta chicken bake. Kind of thing...

It had chicken, Rigatoni noodles, four cheese rosa sauce and ricotta cheese and it was sooo yummy. Also some Monterrey jack shredded onto the top.

So did anyone eat/cook anything interesting for Memorial Day?

We made a blueberry pie from scratch and had some homemade vanilla ice cream with it. That pie didn't last long. There were also some delicious burgers and flat iron steak on the grill and a giant bowl of my special pasta salad.

I made homemade pizza for my family using all veggies from the Farmer's Market. I also used fresh basil from my herb garden. Plus, we had beer from a local brewery. Can't get much better than that!

I made some frosted lemon cookies last week. They turned out really good! I used this recipe from Everyday Food magazine:

Glazed Citrus Doodles - Martha Stewart Recipes

It calls for both lemon and orange, but we didn't have any oranges or orange juice, so I just used all lemon. The dough was so creamy that it looked like little scoops of ice cream when I put it on the baking sheets.

They're not really chewy, but they're starting to get a little crispy because the glaze ran underneath and hardened up. They started out like a softer snickerdoodle, neither chewy nor crispy.

Thanks They do look good. I love lemon but not a huge fan of the lemon cooler type cookies with all the powdered sugar, so these might be good to try.

Alberta bison and wild boar bacon meatloaf with sour cream and chive mashed potato, veggies and a grilled mushroom gravy and potato shards on top.



Chilean sea bass, super jumbo black tiger shrimp, and large wild sea scallops, citrus and tarragon beurre blanc, on top of corn chowder & native rice risotto. Also some veggies.
