i read in the news the other day that a woman died recently from drinking 8 litres of coke a day :coocoo:
 
Haven't been cooking at all lately, which has been depressing me. Which is why doing something as simple today as making a lemon-pepper, basil chicken with lime juice on top on the George Foreman has made me feel great. Plus it was delicious.
 
Tonight I made a ricotta chicken bake. Kind of thing...

It had chicken, Rigatoni noodles, four cheese rosa sauce and ricotta cheese and it was sooo yummy. Also some Monterrey jack shredded onto the top.
 
So did anyone eat/cook anything interesting for Memorial Day?

We made a blueberry pie from scratch and had some homemade vanilla ice cream with it. That pie didn't last long. There were also some delicious burgers and flat iron steak on the grill and a giant bowl of my special pasta salad.

I made homemade pizza for my family using all veggies from the Farmer's Market. I also used fresh basil from my herb garden. Plus, we had beer from a local brewery. Can't get much better than that! :drool:

I made some frosted lemon cookies last week. They turned out really good! I used this recipe from Everyday Food magazine:

Glazed Citrus Doodles - Martha Stewart Recipes

It calls for both lemon and orange, but we didn't have any oranges or orange juice, so I just used all lemon. The dough was so creamy that it looked like little scoops of ice cream when I put it on the baking sheets.
 
They're not really chewy, but they're starting to get a little crispy because the glaze ran underneath and hardened up. They started out like a softer snickerdoodle, neither chewy nor crispy.
 
Thanks :) They do look good. I love lemon but not a huge fan of the lemon cooler type cookies with all the powdered sugar, so these might be good to try.
 
Alberta bison and wild boar bacon meatloaf with sour cream and chive mashed potato, veggies and a grilled mushroom gravy and potato shards on top.

Chilean sea bass, super jumbo black tiger shrimp, and large wild sea scallops, citrus and tarragon beurre blanc, on top of corn chowder & native rice risotto. Also some veggies.

Tonight I made coleslaw for part of my dinner. I'm all about not turning on the oven in the summer months. :)

Here's a stir fry I made a while back with leftover grilled steak from 4th of July. It has basil, chives, and onions from the garden with sweet chili sauce and some other stuff. It's amazing what can be done with leftovers.

Ive always been of the opinion that there is no such thing as too much tzatziki. Then I saw some store-bought stuff sitting amongst the hummus at stop & shop, and maybe I shouldn't have eaten half the container. Carrots and zucchini, and some flatbread sandwich things cos I have no idea where they'd hide pitas at the grocery store. Apparently not with the bread? Either that, or my stomach strongly dislikes drinking 2 cans of soda in a single day.
 
I only discovered that there was such a thing as too much tzatziki when I went to a Greek party and there was the biggest bowl I've ever seen filled with the stuff. Everything I ate was covered in thick, white goo (not gonna bother editing this) and it just became too much.

I still, at least, maintain that there is no such thing as a too garlicky tzatziki.
 
With the deception of the one time I put the entire bulb of garlic in the spaghetti sauce, no, there's never such a thing as too much garlic.

i love garlic but when the hub accidentally uses a garlicky knife to cut some butter while cooking, and the next day at breakfast i unknowingly use the same block of butter on my baguette with a little bit of peach jam and am overwhelmed by nausea at the subtle blend of baguette, butter and peach jam infused with garlic - THEN there IS such as thing as too much garlic!

that was the most horrible culinary experience i've ever had :sad:
 
store-bought tzatziki is vile! why buy it when it's so easy to make?! :lol:
 
Nah, it doesn't taste quite right, but it's not terrible. At least not what I bought. And something tells me you and I have very different definitions of easy to make. Speaking of things that never taste quite right....
 
This weekend, I ate at the Cheesecake Factory for the first time; unfortunately, I didn't have time to actually eat some cheesecake. :sad: I ordered the Luau Salad, which was really good, but the grilled chicken on it was really thin, cold, and limp; the crunchy wonton squares and the mangoes were the best parts. That is one HUGE and busy restaurant! :crazy:

you can't go wrong with home-made tzatziki - i made some this weekend - just grated half a cucumber into some fromage blanc/natural yogurt, added a clove of crushed garlic and a bit of salt and black pepper and gave it a quick stir - it was really yummy!
 
The only tzatziki I've made is the kind you have to leave in the fridge overnight before doing thangs to it. With that in mind, there are a couple of really good store bought brands here, so I never really feel the need to make it these days anyway.
