Thought I would collect everything that's being said in all those videoclips from Adam prior to the release of No Line On The Horizon in the same place. The times refer to the playtime in the old .swf files from u2.com, these are my humble suggestions for what they might say:

Lanois: It's kinda touching to know that you're still associated with people 25 years later as has been the case with Eno and U2. It's something special about entering the arena and having that kind of history behind you. And funny enough, even though maybe you haven't seen people in a year or two, or six months you just immediately feel comfortable and pick up where you left off. So, it's great to be back in the studio with my old compadres.

Actually, I amplified the audio in the background of the conversation between Bono and Lanois in the Eno Gel video and from what I could tell, it is "Winter" being played.

At the end of that clip Bono is singing something which sounds like it could be the word "summer" in that part in the song where he goes "Rhymes they sprang in me/Summer sang in me/But summer sings in me no more.". The melodies sound similar.
The part I'm referring to is heard at approximately 02:18 in Winter.

Now if "it's an opportunity for greatness" I'll leave for you to decide.
I wonder if he's talking about Winter or another song?
EDIT: Actually "There should be a little sort of middle-8 section" i.e. the music in the Dallas clip and "you will have to eventually orchestrate" might indicate that this is indeed the song they're talking about.
